Fresca Magra (Italian Meatloaf)
Ingredients
- Chopped meat, 1-2 lbs (sirloin, chuck, or turkey - for lowfat)
- Italian-style breadcrumbs mixed with grating cheese, to taste
- Garlic
- Salami
- Romano cheese, small wedges
- 2-3 eggs, plus 1 hard-boiled egg
- Salt and pepper, to taste
- Thin, white string for tying meatloaf
- Olive oil, for frying
- chopped salami
- 3-4 pieces of Romano cheese
- sliced hard-boiled egg, seasoned a little with salt
Instructions
Using a large mixing bowl, add the chopped meat, breadcrumbs, 2 eggs, salt and pepper. Using hands, mix thoroughly, adding another egg if the mixture is too dry. When done mixing, shape into loaf, then spread apart in order to fill with the following, evenly distributed:
After all of the above ingredients are on the meat, close the meatloaf, making sure that no ingredient is sticking out, and shape into the desired size. Tie with clean white string to help maintain the meat loaf ingredients. Lastly, brown the meatloaf in some olive oil and then add to the sauce, cooking for about 2 hours.
