Tomato and Paste (Meat-flavored) Sauce
Ingredients
- 1 large can (32 oz) Italian-style tomatoes
- 1 small can (6 oz) tomato paste
- 1 medium or large onion (per taste)
- 2-3 cloves garlic, quartered
- 3-4 T olive oil
- Sweet basil
- Fennel seed, dried (optional - not necessary, especially if Italian sausage is used for flavoring)
- Salt and pepper, to taste
Meat
Using any one of the following meats will make a tasty sauce. Any additional meats will
improve the flavor.
- 1-2 lbs Italian-style sausage
- Chopped meat for meatballs (sirloin is recommended)
- Brocciole - (only for special meals) double the recipe so you have enough sauce
- Fresca Magra (only for special meals)
- Chicken (for special meals) If used as the only meat, this will be a cacciatore sauce.
The chicken makes the sauce a little watery and oily, so take this into consideration when
preparing the sauce
